Tonight Jeff made some tasty lookin’ eggs for dinner.
What’s in it?
- 3 Whole eggs
- about 1/4 cup reduced fat cheese
- about 4oz steamed sweet potato
- sautéed onions and bell pepper
He whisked the eggs in a bowl and made them into an omelet, then threw in the sautéed veggies. Before the eggs were fully cooked he threw the cheese in, then folded it up, served it on a plate, and BOOM! Threw some organic ketchup on that business and was good to go. I called it his smiley breakfast dinner because he drew a happy face with the ketchup 🙂
